BACK TO SCHOOL PARTY: MINI YOGURT COOKIE CUPS!

Cookies are one of the most popular go-to snack kids ask for after school, and these are certainly a perfect fit for a back to school party! With that in mind, we’ve partnered with the Real California Milk to create a mini cookie filled with healthy ingredients! Your kids and their friends will love these sweet sugar cookie cups, and you’ll be happy that they’re also enjoying healthy yogurt and fruit! Everybody wins!

Tip #2: Be sure to have lots of mini cookie cups ready, they are sure to be a hit!

Here’s how to make them:

Mini Yogurt Cookie Cups

Serves 36

Cookie Cup Ingredients

  • 1 1/2 cups all-purpose flour
  • 1/2 tsp salt
  • 1/8 tsp baking soda
  • 5 tbsp Real California unsalted butter, room temperature
  • 3/4 cup granulated sugar
  • 1 1/2 tsp vanilla extract
  • 1 large egg, room temperature

Filling Ingredients

  • 1 cup Real California vanilla yogurt
  • blueberries
  • grapes, cut into halves
  • raspberries

Directions

Preheat the oven to 350 degrees F. Coat 2 mini cupcake pans with nonstick spray; set aside.

Cookie Cups: In a bowl, mix together the dry ingredients. Mix the wet ingredients in a separate bowl. Combine the dry ingredients into the wet and beat until just combined. Divide the dough evenly into the mini cupcake pans. You will fill 36 spots. Press the dough 3/4 of the way up the sides. Bake for 11-13 minutes. Remove from the oven and allow to cool for a few minutes, and then use your fingers to press the middle down to form the cups. Let the cups cool for another 10 minutes in the pan. Twist the cookies in the pan to loosen and then remove. Transfer to a wire rack to cool completely.

Fill with Real California yogurt and top with fruit. Serve immediately or refrigerate.
