Delicious Recipes for Brunch :: Cupcake Vineyards

Just in case you missed our Brunch featuring Cupcake Vineyards yesterday, be sure to check it out here! It is full of simple ideas for brunch food, drinks, decorations and more! As promised, here are the recipes for a few of the featured food items. Our food stylist for the shoot, Joanna Meyer came up with these delicious recipes, perfect for so many occasions!

Lightly dressed with a garlic-infused balsamic vinaigrette, this Spinach Caprese Salad is simple to prepare and refreshing to share.

Spinach Caprese Salad
Serves 4
Ingredients
1 small white onion,thinly sliced
2 cloves garlic, minced
4 tbsp balsamic vinegar
1 1/2 tbsp extra virgin olive oil
1 (10 oz) pkg baby spinach
1 (8 oz) container ciliegine (cherry-sized) mozzarella balls
1 cup yellow cherry tomatoes, thinly sliced
freshly cracked black pepper
Directions
In a bowl, combine the onion, garlic, balsamic vinegar and extra virgin olive oil and marinade for a 30 minutes to create the dressing.
Mix together the remaining ingredients in a bowl, toss with the dressing and serve immediately.

With just a few steps you can create the perfect Mango Pineapple Chutney to upgrade plain cheese and crackers to a sweet and savory treat with a little kick.

Mango Pineapple Chutney over Cream Cheese with Crackers
Serves 12
Ingredients
2 cup pineapples, diced
1 cup mangos, diced
1 jalapeno, seeded and chopped
3/4 cup sugar
7 tbsp white wine vinegar
5 cloves garlic, minced
2 tsp ginger, minced
1 1/4 tsp ground cumin
1/2 tsp sea salt
1/2 tsp ground black pepper
2 (8 oz) pkgs cream cheese, room temperature
crackers
Directions
To create chutney, combine all ingredients (except cheese and crackers) in a saucepan and simmer over medium heat for 15 minutes, stirring occasionally. Remove from the heat to cool.
Spoon chutney over the cream cheese and serve with crackers.
