Cookies are one of the most popular go-to snack kids ask for after school, and these are certainly a perfect fit for a back to school party! Here’s how to make them:
Mini Yogurt Cookie Cups
Cookie Cup Ingredients
- 1 1/2 cups all-purpose flour
- 1/2 tsp salt
- 1/8 tsp baking soda
- 5 tbsp Real California unsalted butter, room temperature
- 3/4 cup granulated sugar
- 1 1/2 tsp vanilla extract
- 1 large egg, room temperature
- 1 cup Real California vanilla yogurt
- grapes, cut into halves
Preheat the oven to 350 degrees F. Coat 2 mini cupcake pans with nonstick spray; set aside.
Cookie Cups: In a bowl, mix together the dry ingredients. Mix the wet ingredients in a separate bowl. Combine the dry ingredients into the wet and beat until just combined. Divide the dough evenly into the mini cupcake pans. You will fill 36 spots. Press the dough 3/4 of the way up the sides. Bake for 11-13 minutes. Remove from the oven and allow to cool for a few minutes, and then use your fingers to press the middle down to form the cups. Let the cups cool for another 10 minutes in the pan. Twist the cookies in the pan to loosen and then remove. Transfer to a wire rack to cool completely.
Fill with Real California yogurt and top with fruit. Serve immediately or refrigerate.
Tip #3: Re-purpose a (new or clean) chalkboard for a darling serving tray! So cute, right?
